Home to some of Champagne's finest Chardonnay vineyards, Taittinger uniquely blends a relatively higher proportion of 40% Chardonnay to the standard Cuvee. Taittinger Brut Reserve is an assemblage de cepages of forty ancient vineyards around the Champagne apellation, matured to perfection at the chais de Taittinger. A delicate wine with flavours of fresh fruit, honey and light briochey overtones. A beautiful mousse enlivened by an effusive aromaticness, it is aged for three to four years in the Taittinger cellars until it reaches optimal maturity.

Taittinger only release a vintage in years of the finest harvest. Brut Millésimé is an assemblage of exclusively first press wines, an equivalence of Chardonnay from Grands Crus in the Cote des Blancs, Pinot Noir from Grands Crus on the Montagne de Reims and Valley Marne. An exquisite Champagne with a mature, powerful, complex character, outstanding elegance and finesse. A generous mousse of greengage and mirabelle plum, dominated by boulangerie and candied fruit, honeyed notes and complex yeasty autolysis.

One reason Brian Stonier founded his winery and planted vineyards was his love of Champagne. He originally established his now famous Pinot Noir vines to craft a luxury sparkling wine. Stonier Sparkling articulates the cool and maritime growing conditions of the Stonier vineyards at Mornington. Exhibiting heady aromatics, heightened flavour profiles of nuts and baked yeasts, with a fine effervescence, Cuvee Stonier expresses fine masculine fruit, in particular from the major component of Pinot Noir grown to cooler sites.

The pictuesque Plunkett Fowles vineyards occupy choice sites throughout the rolling plateaux at the heights of the Strathbogie Ranges. The quality of Pinot Noir and Chardonnay grown here are clearly within the Ivy League of the finest Victorian fruit. An assemblage of roughly equaly proportions Chardonnay and Pinot Noir. The white grapes share their origin equally between a variety of blocks within the Plunkett Fowles Upton Run and Whitegate Vineyards. The black grapes are drawn exclusively from the Trevor's Block at Whitegate.

The flagship sparkling from the House of Seppelt, Salinger is made to authentic Methode traditionelle. One of Australia's premier sparklers, an elegant and refined effervescent wine, with the inclusion of aged reserves for added complexity. Importantly, Salinger is assembled from the very best Chardonnay, Pinot Noir and Meuniere available to Seppelt. From the highest elevation vineyards in King Valley, up to 860 metres, the chilly climes extend the ripening for full development of crisp, elegant flavours. Treated to an extended term of twenty three months bottle age on sedimentery yeast lees, a choice component is sent to seasoned oak barrels for a course of maturation and added complexity. Pol Roger's most prestigious Cuvee, only ever made in the finest vintages, a cepage of Grand Cru Pinot Noir and Chardonnay, sourced exclusively from vineyards which were under vine during Churchill's time. The relationship between Churchill and Roger dates back to a luncheon some months after the liberation of Paris, at which was served the sumptuous 1928 vintage. In attendence were Sir Winston and the beautiful Odette Pol-Roger. They struck up an instant rapport and the friendship between their families endures to this day.

The definitive Pol Roger styling, dominated by Pinot Noir from the villages of Montagne de Reims, the choicest parcels are set aside for their excellence. The lightness and elegance of Chardonnay from the town of Epernay itself and Cote des Blancs, perfection in pink, the noble House of Pol Roger will never release Vintage Rosé until it is aged at least seven years under the Roger cellars. The very fine and persistent mousse for which Pol Roger is renown, owes much to these deep, dark, damp and cool temperature cellars.

Pol Roger is remembered by local Champenois for his resistance against the German army. The grateful townsfolk continued to re elect Roger as mayor until 1935, when they bestowed the honour upon him for life. It was the Champagne of Winston Churchill, who as everybody knows, was satisfied only by the best. Finished without the traditional liqueur expedition dosage, Extra Brut articulates the perfect balance between the holy trinity of grapes, to speak eloquently of the refined balance between Chardonnay, Pinot Noir and Meunier.
